INGREDIENTS:
- 8 ounces organic cherry tomatoes
- 10 organic kalamata olives
- 1 lb. organic grass-fed ground beef
- 8 ounces organic grass-fed cheddar
- 2 cups organic flour of your choosing
- 6 organic pasture raised eggs
- 1 tablespoon organic italian seasoning
- ¾ cup organic parmesan cheese
- 3 teaspoons baking powder
- 1 tablespoon avocado oil
- Salt and pepper to taste
INSTRUCTIONS:
- Preheat the oven to 400 degrees fahrenheit.
- Wash and mince the tomatoes and basil.
- Mince the olives.
- Grate the cheddar and parmesan cheese.
- Heat a medium sized cast iron skillet to medium heat.
- Once heated, add the avocado oil.
- Once heated, add the beef.
- Sauté until full cooked.
- Then, remove from heat.
- Then, in a large mixing bowl, add the eggs, basil, tomatoes, olives, italian seasoning, cheddar and parmesan cheese.
- Stir well.
- Then, add the beef. Stir again.
- Then, add the baking powder, flour and salt and pepper.
- Mix again.
- Then, scoop equal scoops into a greased muffin tin.
- Bake in the oven for 20 minutes or so.
- Let cool for 6 minutes and enjoy.
