28. Asian Chicken Salad

INGREDIENTS

SALAD:

  • 4 handfuls of organic spring mix
  • 6 handfuls of organic romaine (washed and chopped)
  • 1 large organic chicken breast
  • 1 teaspoon avocado oil
  • 1 teaspoon cumin
  • 1 teaspoon ginger powder
  • 1 teaspoon garlic powder
  • 1 teaspoon freshly ground sea salt
  • 1 teaspoon freshly ground black pepper
  • ½ cup chopped organic green cabbage
  • ½ cup chopped organic red cabbage
  • ¼ cup green onions (chopped)
  • 1 avocado (chopped)
  • 3 organic mandarine oranges (peeled)
  • ½ cup organic pineapple chopped
  • ¼ cup almonds
  • ½ cucumber (chopped)
  • ½ cup organic rice noodles
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • Organic basil for garnish


DRESSING:

  • ¼ cup tablespoons olive oil
  • ¼ cup sesame oil
  • 1 tablespoon raw honey
  • ½ cup rice vinegar
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon freshly ground garlic salt
  • ½ tablespoon ginger powder
  • 1 teaspoon basil


INSTRUCTIONS

  • Heat the oven to 375 degrees fahrenheit.
  • Place the chicken in an oven safe glass pyrex dish. Season with the avocado oil, cumin, ginger powder, garlic powder, sea salt and ground black pepper.
  • Once heated, place the chicken in the oven and cook for 30 or so minutes or until full cooked.
  • Wash, dry and thinly slice the romaine and wash and dry the spring mix.
  • Mix the romaine and spring mix in a large bowl.
  • Chop the cucumber, green onion, pineapple, avocado, and cabbage. Peel the oranges, and season the dried rice noodles with chili, garlic and ginger powder. Mix with a tablespoon of water and warm for 30 or so seconds.
  • In a large bowl, combine the lettuce with the cucumber, almonds, rice noodles, cabbage, cucumber, oranges, pineapple, green onion and avocado. I had some of the ingredients on the side, because not everyone likes all of these veggies. So, you can do what works for your family.
  • Combine the olive oil, sesame oil, raw honey, rice vinegar, freshly ground black pepper, freshly ground garlic salt, ginger powder and basil in a mason jar. Mix well.
  • The chicken should be done by now or close to be done. Once, completed, take out of the oven and chop. Service over the salad.
  • Drizzle the dressing over the salad and toss everything together! Garnish with basil and enjoy!
