61. Red and White Baked Pasta

INGREDIENTS

PASTA:

  • 16-18 ounces paccheri
  • 6 tablespoons sea salt for pasta water
  • 8 ounces organic mozzarella (cubed)
  • 6 ounces freshly grated parm
  • 1 tablespoon organic basil

CREAM SAUCE:

  • 4 organic garlic cloves (minced)
  • 3 tablespoons organic grass-fed butter
  • 3 tablespoons gluten free flour
  • 1 cup organic heavy grass-fed cream
  • 1 cup organic grass-fed milk
  • 1 teaspoon sea salt
  • 2 teaspoons freshly ground pepper

RED SAUCE:

  • 1 18-ounce jar tomato sauce
  • 4 organic garlic cloves minced
  • 1 teaspoon sea salt
  • 2 teaspoons organic dried basil
  • 2 teaspoons organic dried garlic powder.
  • 2 teaspoons organic dried oregano
  • 2 teaspoons freshly ground pepper

INSTRUCTIONS:

  • Heat the oven to 375 degrees fahrenheit.
  • Grate the parm.
  • Chop the mozzarella.
  • Mince the garlic.
  • Pasta: Fill a pasta pot with water and salt and bring to a boil. Once boiling, add the pasta. Cook until al dente.
  • Tomato Sauce: Heat a medium sauce pot to medium heat.
    • Once heated add the garlic.Sauté for a few minutes.Then, add the tomato sauce.Then, add the dried basil, oregano, garlic powder, salt and pepper.
    • Stir well and simmer for 20 minutes.
  • Cream Sauce: Heat a small sauce pot to medium heat.
    • Once heated, add the butter.Melt the butter.One melted, add the flour to the pot.Stir well.Then, add the cream and milk slowly.Whisk together with the butter and flour mixture.Then, add the salt and pepper.Bring to a boil and stir continuously.
    • Once thickened, remove from heat.
  • The pasta should be done.
  • Take a large pyrex baking dish.
  • Lay half of the pasta at the bottom of dish.
  • Then, layer half of the tomato sauce and half of the cream sauce.
  • Then, layer half of the parm and half of the mozzarella.
  • Then, layer the rest of the pasta.
  • Layer the rest of the cream sauce and tomato sauce.
  • Then, layer the rest of the parm and mozzarella.
  • Place in the oven and bake for 20 minutes.
  • After baking for 20 minutes, broil for a few minutes, but check the pasta continuously, so it does not burn.
  • Sprinkle basil on top and serve with your favorite salad or veggie.
