69. Gluten Free Chocolate Chip Banana Crumb Loaf Cake

INGREDIENTS

BREAD

  • 3 ripe organic bananas
  • ¾ cup gluten free flour
  • 1 ½ teaspoon baking powder
  • ½ teaspoon sea salt
  • ¾ cup sugar
  • 3 organic pasture raised eggs
  • ½ cup organic grass fed milk
  • 1 cup or so organic chocolate chips
  • 1 cup organic unsalted grass fed butter (melted)

TOPPING

  • ¾ cup gluten free flour
  • 1 teaspoon organic cinnamon
  • 3 ½ tablespoons organic sugar
  • 3 ½ tablespoons organic brown sugar
  • ½ cup organic grass fed salted butter
  • ½ cup organic chocolate chips

INSRUCTIONS

  • Preheat your oven to 350 degrees fahrenheit.
  • Grease a loaf pan with ½ tablespoon avocado oil or butter or cover in parchment paper.
  • Heat a small sauce pan to medium heat.
  • Once heated, add the salted butter. Melt and stir to make brown butter.
  • It should take a few minutes.
  • Then, set aside and let cool.
  • Then, whisk together the flour, sugar, brown sugar, and sea salt for the topping.
  • Then, add the melted unsalted butter.
  • Stir until the crumble is like sand.
  • Then, add the chocolate chips.
  • Set aside.
  • Then, in another bowl peel and mash the bananas.
  • Mix in the milk.
  • Stir well.
  • Then, in another bowl, mix the flour, baking powder and salt.
  • Once the brown butter is cooled, add in the sugar and eggs to the butter. Whisk together well.
  • Then, add to the banana and milk mixture.
  • Then, pour the flour mix into the banana mixture.
  • Stir well until there are no big clumps.
  • Then, mix in the chocolate chips.
  • Then, pour into the baking dish.
  • Top with the crumble, and bake for 60 minutes  (until a toothpick comes out clean when you put into the loaf).
  • Let cool and enjoy!
