INGREDIENTS
- 1 ½ to 2 pounds wild caught large raw shrimp (thawed if frozen)
- 1-2 small to medium sized organic tomatoes (finely chopped)
- 3 slices red onion (thinly sliced and chopped)
- 1 jalapeno (finely chopped)
- 1-2 small organic cucumbers (chopped)
- 2 tablespoons organic cilantro
- 1-2 avocados (chopped into cubes)
- 1 teaspoon organic red pepper
- 1 teaspoon organic garlic powder
- 1 teaspoon pepper
- 1 teaspoon salt
- 3-4 cups organic lemon juice or lime juice (or a mix) (enough to cover the shrimp)
INSTRUCTIONS
- Chop the shrimp into one-inch pieces.
- Place in a large mixing bowl and cover entirely with the lemon/lime juice.
- Let sit for 2-3 hours or until the shrimp is fully cooked by the juices.
- Chop the tomatoes, red onion, jalapeno, cucumbers, avocado, and cilantro.
- Place into serving bowls in equal parts or only include the ingredients each person eating the ceviche. In the alternative you can place in one large bowl. I just have picky eaters.
- Then, add the salt, pepper, garlic powder and red pepper to each bowl or bowl.
- Once the shrimp is fully cooked mix the shrimp into each serving bowl in equal parts or all together in one bowl. Add a little bit of the juice for citrus.
- Then, serve with tortilla chips or taco shells and rice and beans.
